I think cheesecake is just heavenly. If I could eat it every day, I would for sure! I'm going to share my recipe for White Chocolate Strawberry Cheesecake Bars. They are adapted from the recipe shared by Sally's Baking Addiction. Except she used raspberries and I wanted to try my own spin on it.

Cook Time 30-32 minutes
Yields 9 bars
Ingredients
Cheesecake
22 oreos
1/4 cup melted butter
450 grams cream cheese
1/4 cup sugar
170 grams melted white chocolate
3 eggs
1 teaspoon vanilla
1/8 teaspoon salt
1 teaspoon lemon juice
1 Tablespoon flour
Strawberry Sauce
450 grams Strawberries- hulled and halved
2 Tablespoons water
1/4 cup sugar
1 teaspoon corn starch
Instructions
To make the strawberry sauce: combine the strawberries, sugar, corn starch and water in a saucepan. Bring to a simmer and remove from the heat immediately.
Blend until smooth. Strain the strawberry sauce to remove all the seeds.
Cool the sauce to room temperature. Refrigerate until ready to use.
Preheat the oven to 180c.
To make the crust: crush the Oreos and mix in melted butter. Press into a parchment lined 9x9 inch square pan. Bake at 180c for 10 minutes. Cool.
Melt the white chocolate and mix well. Set aside to cool slightly.
Beat the cream cheese and sugar on high for 2 minutes until smooth. Add the flour, vanilla and salt. Mix to combine.
Add the eggs one at a time and mix to combine. Do not over mix. Finally add the white chocolate which should still be liquid but not hot.
Pour half of the cheesecake mixture onto the crust. Dollop over the strawberry sauce onto the cheesecake mix. Pour over the rest of the cheesecake mix and then top off with some more strawberry sauce.
Use a sharp knife to make swirls in the batter.
Bake at 180c for 30-32 minutes until the centre is just set.
Cool completely on the counter, then chill in the fridge for 4 hours before slicing and serving.
