The winters are here. It’s freezing cold and the kids are coming down with the cold and flu as well. And all I want to do is use minimal energy and spend the day sitting by the radiator with a huge cup of tea and biscuits!!!! This trout with garlic butter herb sauce was perfect. It look minutes to come together and I served it with mash potatoes and veggies. A lovely filling meal when you don’t want to put much time into a great dinner.
The reason why I am trying to make more fish recipes, is because I want the kids to eat something other than tuna, so that they get all that fish oil and omegas In their diet. These are both important in the winters. I’m already giving them cod liver oil, although they hate it so much, but they need it in this cold. Fish is perfect for their little, growing bodies.
Preparation Time 5 minutes
Cook Time 20 minutes
Serves 4
Ingredients
1 kg trout fish/ 2 large trout fillets -with skin on
2 tablespoons olive oil
1 tablespoon Italian seasoning (thyme, oregano and parsley)
1/4 teaspoon salt
4 cloves of garlic- minced
3 tablespoons lemon juice
2 tablespoons butter- softened
2 tablespoons coriander- chopped
Instructions
Preheat the oven to 180c.
Season fish with herb seasoning and salt.
Place a large pan on a medium heat, heat 2 tablespoons olive oil.
Place the fish skin side down. Cook it for 3-4 minutes until lightly browned. Flip it over and cook It on the other side for 2 minutes more. Remove it from the pan and place it in a baking pan. Do not clean the pan. Leave it for the sauce. Cover in foil and steam in the oven at 180c for 5 minutes.
In the meantime, let’s make the garlic herb butter sauce. Add the garlic, butter, lemon juice and salt to the pan. Cook it on a low heat until the garlic softens. Mix in the chopped coriander. Spoon the sauce over the fish. Garnish with lemon slices.
Serve with mashed potatoes and veggies.
