I love all kinds of Mexican/ Tex-Mex food. And I love that kids can have a hand at making their own enchiladas. It’s so much fun for them to help in the kitchen. My kids loved making these with me. They enjoy filling the tortillas, rolling them up and then topping them with sauce and cheese.
Swap out the beef for chicken or even lamb. You can pick and choose which protein suits you and your family.

Ingredients
1/2 kg ground beef
1/2 large onion- diced
2 1/2 tablespoons taco seasoning (recipe here)
1/4 cup water
8 soft tacos / tortillas
500 grams cheddar cheese- grated
2 cups enchilada sauce (recipe here)
Toppings
Sour cream
Pico de Gallo
Avocado
Salsa
Sliced green onions
Instructions
Preheat the oven to 180c.
Brown the beef and onions in a large pan until well browned. Drain the fat.
Add taco seasoning and water. Cook until the water is absorbed. Remove it from the heat.
Spread 1/2 sauce over the bottom of a 9 x 13 inch pyrex baking dish. Add 1/3 cup of beef into each tortilla. Add 1/4 cup grated cheese to each one. Roll it up tightly.
Lay them seam side down into the dish. Repeat with the rest of the tortillas. Place them as close together as possible. Spread the remaining beef over the tortillas.
Spread the rest of the enchilada sauce over the top. Top the enchiladas with the rest of the cheese and then bake at 180c for 20-25 minutes.
