Fresh berries are my favourite and I’m always on the hunt for berry and chocolate desserts. This strawberry and chocolate galette is such an easy dessert, it’s perfect for beginners and pairs well with ice cream or double cream.
Ingredients
2 1/2 cups strawberries- hulled and halved
3 tablespoons sugar
1 teaspoon vanilla
2 teaspoon cornstarch
1/2 cup chocolate chips
Crust
1 1/4 cups all purpose flour
1/4 teaspoon salt
3 tablespoons sugar
1/2 cup cold butter- in cubes
2-4 tablespoons ice water
1 egg
Egg wash
Coarse sugar for sprinkling over the top
Instructions
Macerate the strawberries: combine the strawberries, sugar and vanilla. Mix well and set aside for 10-15 minutes.
Drain the fruit of all the liquid. Sprinkle over the corn starch and mix well. Add the chocolate chips and mix it in. Chill until ready to use.
Make the crust: place the flour, sugar and salt in a food processor. Pulse to combine. Add the cold butter and pulse a few times until crumbs. DO NOT OVER PULSE. Just a few times.
Add egg and ice cold water and pulse 2-3 times. The mixture will begin to come together. You don’t need to over pulse.
Dump the mixture out onto a floured work surface. Handle lightly. Roll out into a disc shape around 10-12 inches. Place onto a lined baking sheet and chill for 1 hour.
Preheat the oven to 180c. Place the berries in the middle of the pastry, leaving a 2 inch border so we can fold it over later. Fold the pastry over itself to create a galette shape. (Refer to the video to help).
Brush with egg wash and sprinkle over some coarse sugar. Bake at 180c for 20-25 minutes until golden and crispy.
