School lunchboxes and snacks are so important to me. I want to make sure the kids get a great variety of foods in their diet. And to be honest, I wouldn’t want to eat the same thing every day, so how can I expect others to enjoy the same foods every day too? But these sticky sweet chilli chicken skewers were a huge hit! Perfect for school lunchboxes and even as a teatime snack. They love eating food off a stick so these were fantastic!
What I love most about these sticky sweet chilli chicken skewers is that I can just put them in the air fryer and they only take 15 minutes to cook. So easy to make. Perfect for beginners too.

Ingredients
650 grams boneless, skinless chicken breast- cubed
2 tablespoons oil
2 teaspoons smoked paprika
1 teaspoon cumin
1 teaspoon chilli powder
1 teaspoon oregano
1 teaspoon garlic powder
1 teaspoon onion powder
1 tablespoon lemon juice
2 green peppers- cubed
6 tablespoons Thai sweet chilli sauce
2 tablespoons soy sauce
1 teaspoon garlic paste
1 teaspoon ginger paste
Instructions
Marinate the chicken in the paprika, cumin, chilli powder, oregano, garlic powder, onion powder, oil and lemon juice. Mix well and thread the chicken onto skewers. Set aside 10 minutes
In the meantime, combine the Thai sweet chilli sauce, soy sauce, garlic paste and ginger paste in a pan. Cook on a medium heat until thickened.
Remove half the sauce and set it aside. Add the peppers to the remaining half of the sauce and cook it off for 2-3 minutes. The colour of the peppers will change.
Brush the chicken with the sauce flip sides. Continue to cook it for another 5-6 minutes. Keep basting the chicken, every 2 minutes.
Place the peppers on the base of the plate. Top with the chicken and garnish the chicken with sesame seeds and green onions.
