I love to make easy and delicious recipes at home for the family. Sundays are reserved for a huge Sunday roast. And this time I wanted to change up the normal roasted potatoes with something with a little kick. These spicy roasted potatoes were amazing. I decided to pair them with a garlic aioli just to test out. I’m glad I did. You should try it too.

Serves 8
Ingredients
1.5 kg red potatoes- peeled and cut into 1.5 inch cubes
2 tablespoons olive oil
2 cloves garlic- minced
2 teaspoons paprika
1/2 teaspoon chilli powder
1/2 teaspoon cumin powder
1/2 teaspoon coriander powder
1 teaspoon salt
1/2 teaspoon crushed red chilli flakes
1/8 teaspoon black pepper
Garlic Aioli
1 1/2 cup mayonnaise
3 tablespoons fresh lemon juice
3 cloves garlic- minced
1/2 teaspoon vinegar
1/4 teaspoon salt
1/4 teaspoon black pepper.
Instructions
Preheat oven to 180c. Par boil the potatoes for 10 minutes . Drain and pat them dry.
Combine the olive oil, paprika, garlic, chilli powder, coriander powder, salt, crushed red chilli flakes and the black pepper. Mix well and toss the potatoes in the spice mix.
Transfer into baking trays and bake at 180c for 25-30 minutes until crispy and crunchy.
For the Aioli: Combine all the ingredients and serve.
