I make sure my freezer is always well stocked because I entertain a lot of guests. Which means snacks! My freezer has two compartments specifically dedicated to remade snacks. Mind you, these are all homemade frozen snacks. They range from samosas, spring rolls, to mini pies and turnovers. One of my favourite snacks are these spicy garlic potato bites.
They are so easy to make and taste amazing. The only thing I have to do is deep fry them until golden and serve them with a garlic mayo dip. It's a keeper.

Serves 6
Ingredients
3 potatoes- boiled
2 tablespoons vegetable oil
1 teaspoon garlic paste
1 teaspoon red chilli flakes
100 grams rice flour
2 tablespoons corn starch/ corn flour
salt - to taste
Oil for deep frying
Instructions
Peel and boil 3 potatoes.
Grate them and set them aside.
Place the oil in a large frying pan. Add the garlic and sauté for 1 minute, until fragrant. Add the red chilli flakes and mix well.
Add 1 cup of water to the pan. Bring it to a boil.
Add rice flour. Mix well. Cook for 2-3 minutes on a medium heat. It will become a thick paste.
Pour it into a bowl and cool it down completely.
Add the grated potatoes, corn flour and salt as to your taste. Mix well with your hands.
Grease your hands with some oil. Roll the mixture out into a thick log.
Divide the log into 4 pieces. Roll each piece into a thinner log. Cut into mini bites.
Deep fry these until golden brown. Freeze any unused potato bites.
Serve with garlic mayo.
