I love creating new lunch ideas for my kids. Sometimes lunch ideas end up being snack ideas too. When your mum is a YouTuber then snacks are just a normal thing. These Spicy Chicken Sandwiches were ‘supposed’ to be for lunch, but ended up being for lunch and snacks!
Anyway, I serve these Spicy Chicken Sandwiches are served with coleslaw and fries. The recipe I use for the coleslaw is here.

Serves 2
Ingredients
200 grams Chicken Breasts- cubed
1 teaspoon Lemon juice
1/2 teaspoon Salt
1/4 teaspoon Black pepper
2 teaspoon Oil
1 teaspoon Garlic powder
1/4 teaspoon Chilli powder
1/2 teaspoon Chilli flakes
1 teaspoon Soya sauce
1 tablespoon Chilli Garlic Sauce
1 tablespoon ketchup
Mayonnaise
Bread
Cheese slices
Lettuce
Tomato slices
Pickle slices
Jalapeno slices
Instructions
Marinate the chicken chunks in the lemon juice, salt, pepper, garlic powder, chilli powder and chilli flakes. Mix well and set aside for 30 minutes.
Once ready to fry, set a frying pan on the stove over a medium heat. Fry the chicken until the colour changes. Ad the soya sauce, chilli garlic sauce and the ketchup. Mix well. Cook on a low heat for 3-5 minutes until the sauce thickens.
Remove from the heat and allow to cool to room temperature.
To assemble the sandwiches: toast 4 slices of bread until golden.
Spread mayonnaise on the toast slices, add cheese, tomato slices, pickle slices and other toppings. Add half of the chicken mixture and then close the sandwiches.
Slice and serve with coleslaw and fries.
