Sometimes you don't want to stand at the stove after a long day and cook dinner that you know the kids will complain about anyway. So I came up with this delicious spicy chicken and vegetable macaroni, that your little ones will fall in love with.

Serves 4-6
Ingredients
2 cups dry pasta
Salt for pasta
1 tablespoon vegetable oil
1 teaspoon vegetable oil
2 cloves garlic- minced
1 chicken breast- finely chopped
1 large onion- finely chopped
2 tomatoes- finely chopped
salt - to taste
1 small carrot- finely chopped
1/2 green capsicum- finely chopped
1/2 teaspoon chilli powder
1/2 teaspoon garam masala powder
2 Tablespoon tomato sauce
1 Tablespoon chilli sauce
1/4 teaspoon white pepper
Coriander for garnish
Instructions
Boil the pasta in generously salted and oiled water until al-dente. Strain in a colander and set aside.
Fry off the chicken in 1 teaspoon vegetable oil.
Add the chopped onions and minced garlic. Sauté on a low heat for 2 minutes, until the onions are translucent.
Add the tomatoes and salt to taste. Mix well and sauté for 2 minutes.
Add the carrots and capsicum and cook on a low heat for 3-5 minutes.
When the vegetables have wilted slightly, add the chilli powder and garam masala powder. Mix well.
Pour in the tomato sauce and chilli sauce. Mix to coat the vegetables.
Add the drained pasta and fold into the vegetables.
Cook on low heat for 2 minutes. Top with chopped coriander and serve.
