As the weather changes, our BBQs become less frequent but we try to squeeze in as many as possible. And the kids love s’mores the most! They find it so much fun to stand in front of the bbq and make their own s’mores. So once the weather changes and they can’t make s’mores, I decide to make these s’more cookie bars so that they can enjoy them even in the colder months of the year.

Cook Time 35 minutes
Yields 12 bars
Ingredients
1/2 cup butter- room temperature
1/2 cup light brown sugar
1/4 cup sugar
1 egg- room temperature
1 teaspoon vanilla
1 1/3 cup flour
3/4 cup cookie crumbs
1 teaspoon baking powder
1/4 teaspoon salt
1 cup chocolate chips
1 cup mini marshmallows
Instructions
Preheat the oven to 170c. Line an 8x8 inch pan with foil or parchment paper. If using foil, then grease it lightly with melted butter. Set it aside.
Cream the butter and sugars together for 3-4 minutes until light and fluffy. Add the egg and vanilla and mix it in.
Add the flour, cookie crumbs, baking powder and salt to the bowl. Mix it in until only a few spots of dry flour are visible. Switch to a spatula and fold it in the rest of the way. Be careful not to over mix the dough.
Divide the dough in two parts. Press half the dough into the bottom of the pan. Top with the marshmallows and then the chocolate chips. Top with the remaining cookie dough.
Bake at 170c for 30-35 minutes.
Cool before cutting and serving.
