I love the summer months. We get the best fruits in the summer, which means the best summer desserts. My favourite being berries. All types of berries are my favourite. I love the sweet and tart flavours and how they are so easy to work with.
This summery strawberry galette is such a quick and easy dessert. And I serve mine with heaping scoops of vanilla ice cream. You will love it as much as I do. Top it with the extra juices from the macerated strawberries.

Serves 4-6
Ingredients
Crust
190 grams all purpose flour
50 grams sugar - plus 1 tablespoons extra for sprinkling
1/4 teaspoon salt
120 grams cold butter- cubed
60 ml ice water
1 egg- beaten
Strawberry filling
400 grams strawberries- hulled and quartered
30 grams sugar
1 teaspoon vanilla
Instructions
Combine the filling ingredients in a bowl and set it aside.
Make the crust by combining the flour, sugar and salt in the food processor. Pulse to mix. Add the butter and pulse until crumbs form. Slowly add the ice water until large crumbs form. Empty onto the counter. Bring it together and form into a disk. Wrap in cling film and refrigerate for 1 hour.
Preheat the oven to 180c. Line a baking tray with parchment paper.
Roll the dough into a 30cm circle. Transfer to the tray.
Spoon over the strawberries into the middle of the circle, but not the liquid. Reserve it for later. Make sure to leave a 2 inch border empty around the edges.
Fold over the edges of the dough to the middle and press to seal in place.
Brush with egg wash and sprinkle over some extra sugar.
Bake at 180c for 25-30 minutes, until golden and crispy.
