Recently, I got a request from a lady who wanted me to add more dessert recipes, because they really enjoyed the dessert recipes I had been sharing. So off to the kitchen I went and operation ‘dessert test kitchen’ began. And the arguments between the kids too. One wanted red velvet cookies, the other wanted chocolate chip cookies. I didn’t want to fight, so I put the two of them together and created these red velvet brookies. The only difference is that the red velvet ‘cookie’, is now a brownie. Which tastes AMAZING!

Ingredients
Chocolate chip cookie layer
1/3 cup butter
3/4 cup brown sugar
1/2 cup sugar
1 teaspoon vanilla
1 egg
1 1/2 cup flour
1/2 teaspoon baking powder
1/4 teaspoon salt
1/2 cup chocolate chips
Red Velvet Brownie layer
1/4 cup butter
1/2 cup sugar
1/8 cup cocoa powder
1/2 teaspoon vanilla
1/2 tablespoon red food colouring
1/4 teaspoon vinegar
1 egg
A pinch of salt
6 tablespoons flour
Instructions
Preheat the oven to 170c. Line an 8 inch square pan with parchment paper. Set it aside.
For the cookie layer: cream the butter and sugars tougher for 3-4 minutes until light and fluffy. Add the egg and vanilla. Mix well. Then fold the four, baking powder and salt into the mixture.
Fold in the chocolate chips then set the mixture aside.
For the red velvet brownie layer: whisk the butter, sugar, cocoa powder, vanilla, red food colouring, vinegar, egg and salt in a bowl. Fold in the flour.
Alternatively add scoops of the cookie dough and red velvet brownie into the prepared baking pan.
Bake the red velvet brookies for 25- 30 minutes. Remove from the oven and top only the chocolate chip cookie part with extra chocolate chips.
Cool and slice.
