I’m always looking for something quick, easy and healthy for the kids to eat in the afternoons once they come back from school. These chicken quesadillas are very quick, easy and filling, which is perfect for the kids after football club and swimming.

Cook Time 15 minutes
Serves 4
Ingredients
2 chicken breasts- cubed
1 teaspoon cajun spice
Salt and pepper- to taste
1/2 large onion- sliced
1 green prpper- sliced
8 rashes bacon
1 cup cheese- shredded
2 tablespoons oil
4 tortillas
To Serve
Sour cream
Pico de Gallo
Guacamole
Instructions
Marinate chicken in cajun spice, salt and pepper.
Fry chicken for 3-4 minutes until cooked through. Remove the chicken from the pan and then place the pan directly on the stove without cleaning it. Fry the bacon rashes until golden. Remove from the stove and cut up into pieces.
Saute the onions and green pepper for 3-4 minutes until partially cooked through. Season with salt and pepper. Remove from the pan
Set up quesadillas station: place a large pan on the stove, add a tortilla and warm it through otherwise they may rip when folded over.
Once the tortilla is warmed up, place a quarter of the chicken, bacon, onions, peppers, and cheese on half of the tortilla. Fold it over and cook both sides on a low heat until golden and crispy. The cheese will melt and seal the quesadilla shut.
