Popcorn Chicken

Popcorn chicken is something that the kids love eating and I prefer to make it at home instead of them getting the ultra processed stuff from the store. I also don’t want them picking up fast food every day, it just isn’t healthy, right? Also the last reasons why I don’t let them get fast food all the time is because I can make it better at home and at a fraction of the cost. Serve this popcorn chicken with fries or potato wedges. Serves 4-6
Ingredients
1/2 kg chicken breasts- cubed
1 cup flour
1 1/4 teaspoon paprika- divided
1 1/4 teaspoon salt- divided
1 1/4 teaspoon black pepper- divided
1 egg
1 teaspoon garlic powder
1/8 cup milk
Oil- for deep frying
Instructions
Combine the flour, 1 teaspoon paprika, 1 teaspoon salt, 1 teaspoon black pepper and 1 teaspoon garlic powder. Whisk it all in and set it aside.
In another clean bowl, whisk the egg, milk, 1/4 teaspoon paprika, 1/4 teaspoon salt and 1/4 teaspoon black pepper together until well combined.
Pour a couple tablespoons of the egg mixture in the dry mix and mix it in. This will help create little crunchy pieces.
Dip the chicken in the dry flour mix, then in the egg mixture, then back into the dry flour mix. Shake off any excess flour and place the chicken on a lined tray.
Heat one inch of oil in pan to 180c. Fry the chicken off in batches for 2-3 minutes each side until golden and crispy.
Serve with your favourite dipping sauce.
