These days, when I’m extremely busy, I look for easy dinner ideas for the kids. Something that I can put together quickly and doesn’t require much work. These quesadillas work well because I can use any kind of protein, leftover veggies and I always have marinara sauce in the fridge. Oh, and lots and lots of cheese. It works well for the kids because they can customize the toppings according to their mood.
The kids love the classic Pepperoni and Cheese Quesadillas. My husband prefers Pepperoni, Cheese and loads of Veggies (including jalapenos). They are delicious! These work well for the kids, especially since they are trying their skills on basic cooking, which includes cutting, grating, and working on the stove.
I serve these with a thick smoothie (check out some great smoothie recipes). That way, the kids get in a serving of calcium and fruits in with their dinner.
The recipe is below. You can customize the toppings to your family’s preference

Cook time 10 minutes
Serves 2
Ingredients
4 tortillas
½ cup marinara sauce
10 slices pepperoni
1 grilled chicken breast- chunks
8 olives- sliced
½ onion- sliced
¼ green pepper- sliced
1 cup cheese- grated
Instructions
Lay a tortilla on a board.
Spread marinara sauce, cheese and desired toppings on top.
Cover with another tortilla
Transfer to a large frying pan
On a low heat, melt the cheese and flip halfway through. If a child is making this, then they may need some assistance.
After flipping, cook the other side for an additional couple minutes. Return the quesadilla to the board and cut into quarters. (you need adult assistance for this, for sure)
Transfer to a plate and serve. Be careful, the quesadilla will be HOT HOT HOT!
Enjoy these with some cool sour cream on the side. Or if your kids prefer, extra marinara sauce.
