Ingredients
3/4 cup pistachios- pulsed into crumbs
1 cup flour
1/2 teaspoon salt
1/4 teaspoon baking soda
1 teaspoon baking powder
2 tablespoons oil
1/4 cup butter- softened
3/4 cup sugar
2 eggs- room temperature
1 teaspoon vanilla
1/8 cup sour cream
1/8 cup milk
Cream Cheese Frosting
1/2 cup cream cheese
1/4 cup butter- softened
1/4 teaspoon salt
1 teaspoon vanilla
2 cups icing sugar
Decoration
1/8 cup pistachios- broken
Instructions
Preheat the oven to 180c. Grease an 8 inch square cake tin with parchment paper. Set it aside.
Pulse the pistachios until a fine powder forms.
Combine the pistachios flour, baking powder, baking soda and salt. Mix well and set it aside.
Bea the butter and sugar together on a high speed for 3-4 minutes until light and fluffy.
Add the eggs and vanilla. Mix it all in. Pour the sour cream and milk into the batter. Add the dry ingredients and mix it all in until JUST combined.
Pour the batter into the prepared baking pan. Bake at 180c for 30-35 minutes. Cool the cake completely.
For the frosting: beat the cream cheese and butter together until just combined. Add the vanilla, icing sugar and salt. Mix it until smooth.
Once the cake is cooled, spread the cream cheese frosting over the cake. Top it with extra pistachios. Chill 2-4 hours before serving.
