Peri Peri Chicken

Peri Peri chicken is such a great meal to rustle up when I’m so busy and I want something that I can marinate and toss in the oven just before dinner. The best bit is that I just add the potatoes to the same pan so they get a hit of that spicy marinade too! Serve this peri peri chicken with my famous roasted vegetables

Ingredients 


7 cloves garlic- minced 

1 1/2 red peppers

1 medium onion 

2 teaspoons oregano 

1 1/2 teaspoon parsley 

1 teaspoon paprika 

2 teaspoon smoked paprika 

1 teaspoon black pepper 

2 teaspoon salt 

1 red chilli- seeded and soaked in hot water 

1 tablespoon vinegar 

3 tablespoon olive oil 

2 tablespoon fresh lemon juice 

1 kg chicken- whatever cut you prefer. 

1 kg potatoes- cut into wedges 








Instructions 


  1. Blend the spices and everything except the chicken and potatoes until smooth. 

  2. Place the chicken in a 9x13 inch baking tray. Marinate the chicken and chill it for 4 hours or even better marinate the chicken overnight. 

  3. Once you are ready to bake, preheat the oven to 180c. Add the potatoes to the pan and mix them in. 

  4. Cover the baking tray in foil and bake the chicken for 40 minutes. Then remove the foil and bake it uncovered for 30 minutes more. Broil for 2-3 minutes until crispy.
