This is a perfect cake to serve with tea. The zesty flavour of this cake is just amazing. What I love most about this cake is that it contains no flavourings or essences. Just fresh orange zest and orange juice.

Cook Time 45 minutes
Yields 1 Loaf
Ingredients
1/4 cup butter - softened
1/4 cup vegetable oil
1 cup sugar
2 eggs
Rind of 1 orange
1/2 cup fresh squeezed orange juice
2 cups all purpose flour
2 teaspoon baking powder
1/2 teaspoon salt
1/2 cup milk
Glaze- optional
3 tablespoons fresh orange juice
1/4 cup icing sugar
Instructions
Preheat the oven to 180c. Line a 9x5 inch loaf pan with parchment paper.
Beat the butter, oil, sugar and one egg on a medium speed for 5 minutes, until smooth.
Add the second egg, orange juice and orange rind. Mix until combined.
Slowly add the flour, baking powder and salt to the wet ingredients. The mixture will be thick- don't worry.
Slowly pour in the 1/4 cup of milk. Mix until the batter is just combined. DO NOT OVER MIX.
Pour the batter into the loaf tin.
Bake at 180c for 45 minutes to an hour. An inserted skewer will come out clean.
Glaze: Combine the icing sugar and orange juice in a bowl to make the glaze. Drizzle over the top of the cake once it is cooled.

Delicious loaf cake, and easy to make with very few ingredients!
Only problem was with the glaze. I think I may have used a bigger orange than you, because my "juice of 1 orange" was nearly 1/2 cup, and I needed a LOT more sugar to get any kind of glaze-y consistency. When I started having trouble, I looked at other sites' glaze recipes, and most of them use a much smaller juice:sugar ratio.
My cake still turned out delicious in the end. :)
