I love baking on the weekend. A cup of tea in one hand, my recipe book in the other. Before everyone has even woken up in the morning, I’m already done making something delicious for breakfast, whenever the family wakes up for breakfast. This one bowl fresh berry cake is perfect. No extra dishes, no messing around. It’s quick and easy, perfect for the mornings.

Serves 6-8
Ingredients
1/2 cup butter- softened
3/4 cup sugar
2 eggs- room temperature
1 teaspoon vanilla
1 cup all purpose flour
1 teaspoon baking powder
1/4 teaspoon salt
2 cups fresh mixed berries- plus 1/2 cup berries
3 tablespoons flaked almonds
To serve
Whipped cream
Additional berries
Instructions
Preheat the oven to 180c. Line a 8x8 inch square/ round baking pan with parchment paper. Set it aside.
Beat the butter and sugar on a high speed for 3-4 minutes until light and creamy.
Add the eggs to the mixture, one at a time, beating well between each addition. Mix in the vanilla.
Add the flour, baking powder and salt to the mixture. Mix well until combined. Scrape down the sides of the bowl and mix until smooth.
Fold the berries into the batter.
Pour the batter into the lined baking tin.
Top with the additional berries. Top with the additional flaked almonds.
Bake at 180c for 20-25 minutes until an inserted toothpick comes out clean.
Remove from the oven and cool to room temperature.
Serve with whipped cream and fresh berries.
