Baking is my jam! Even when I’m exhausted after a busy day and the kids ask for cookies or cake, I’ll happily get up and make whatever they want- just so long as I have the ingredients at home.
These oatmeal chocolate chip cookie bars are so easy to make, and perfect for lunchboxes or even to take on the road. You have to make these today! Easily double this recipe for larger crowds or bake sales.

Serves 12
Ingredients
1/2 cup butter- softened
1/2 cup brown sugar
1/4 cup sugar
1 egg- room temperature
1 teaspoon vanilla
1/4 teaspoon salt
1/2 teaspoon baking soda
1/2 teaspoon baking powder
3/4 cup flour
1 cup rolled oats
1 cup chocolate chips
1/4 cup chocolate chips- to serve
Instructions
Preheat the oven to 180c. Line an 8 inch square baking pan with parchment paper. Set it aside.
Beat the butter and sugars on a high speed for 3-4 minutes until light and fluffy.
Add the egg and vanilla. Mix it in until well combined.
Add the flour, baking powder, baking soda, salt and oats to the batter and mix it in until just combined. DO NOT OVER MIX IT.
Stir in the chocolate chips.
Press the dough into the prepared pan.
Bake at 180c for 25 minutes.
Remove it from the oven then sprinkle over the remaining chocolate chips. Cool before serving.
