We are all looking for recipes that require less work and maximum flavour, right? That means no knead, full of marinated meats, roasting and air frying. We are all looking for easy meals to feed the kids and make sure they have a full tummy with something other than snacks and treats. This no knead focaccia bread is perfect with soup and as a base for sandwiches.
What are your favourite focaccia toppings? My favourites are: olives, sun dried tomatoes, garlic, onions, cheese and peppers.

Serves 4-6
Ingredients
1 teaspoon yeast
1 teaspoon honey
1 1/4 cup warm water
2 1/2 cups flour
4 tablespoons oil
2 teaspoon salt
2 tablespoons butter
3 cloves garlic- minced

Olives
Onions

Instructions
Whisk the yeast, honey and 1 1/4 cup warm water in a bowl. Leave it to rise for 10 minutes.
Add the flour and salt. Mix it in with a spatula until the flour is no longer dry. The dough will be loose and shaggy.
Pour 2 tablespoons oil in a large bowl. This dough will RISE! Transfer the dough into a bowl and coat it In oil. Cover the bowl with clingfilm and chill the dough for 8-24 hours until doubled in size.
Grease an 8x8 inch pan/ pyrex dish with 1 tablespoon oil. Place the dough in the middle of the pan.
Use 2 forks to turn the dough. Then turn it by 90 degrees and fold the dough over with the forks again. Repeat this process 3 more times. Fold it upside down, cover it and let it rise for 4 hours at room temperature until doubled in size.
Place a rack in the middle of the oven. Preheat the oven to 220c. To see if the dough is ready, poke the dough, it will spring back slowly and leaves a small indentation. If it springs back quickly then the dough isn’t relaxed and ready.
Oil your hands lightly and stretch the dough to the corners. Dimple the dough with your fingers aggressively. Make deep indentations in the dough.
Top the dough with your favourite toppings and salt.
Bake the focaccia at 220c for 20-30 minutes.
When you are ready to serve: melt the butter in a saucepan. Add the minced garlic and cook it on a low heat for 30 seconds. Remove it from the heat then brush it over the baked focaccia.
Slice and serve.
