The hot summer months means that standing in the kitchen is a real pain. But that doesn’t mean that the cravings for dessert aren’t there. This dessert is cooling and so refreshing. You only need a handful of ingredients. Let’s make it now!

Ingredients
Crust
1 1/2 cups digestive biscuit crumbs
1/3 cup sugar
1/2 cup butter- melted and cooled
Filling
228 grams cream cheese- room temperature
200 ml whipping cream
3/4 cup sugar- divided
500 grams crushed pineapple- drained
1/2 cup pineapple chunks
Instructions
Make the crust by combining all the ingredients. Mix well and press into a 9x9 inch pyrex dish.
Make the filling: beat the cream with 1/4 cup sugar until stiff peaks. Set it aside.
In another bowl, beat the cream cheese and the remaining 1/2 cup sugar until just combined.
Fold the cream into the cream cheese mixture.
Fold the crushed pineapple into the cream mixture.
Spread filling over the base and level out with offset spatula. Top with extra pineapple chunks.
Chill in the fridge for a minimum of 4 hours.
