No Bake Mini Pizzas

We are all going through so much with the pandemic being the way it is, and lockdown making travelling difficult. I understand that some people do not have access to an oven or theirs has broken down. A friend of mine recently asked if I would share some delicious no bake, no oven recipes that she could make for her little ones during this difficult time. I obviously said YES! Another thing that occurred to me was that we should make some recipes without eggs because there are some who are having difficulty getting access to specific ingredients too.


These Mini pizzas are just amazing. My kids loved how they were the perfect size for them and they could have different things on each pizza. I loved these pizzas because I was able to use up leftover bits and bobs that I had lying around in the fridge. To use up the last few olives, half a green pepper, a handful of sweetcorn and some chicken tikka sitting at the back of the fridge. These were the best!






Preparation Time 1 hr

Cook Time 20 minutes

Yields 12-16 mini pizzas


Ingredients


1/2 cup warm milk

2 teaspoons yeast

1 teaspoons sugar

2 cups flour

1/2 teaspoon salt

2 tablespoons vegetable oil


1 cup pizza sauce

2 cups shredded cheese

Additional toppings




Instructions

  1. Combine the warm milk, sugar and yeast in a bowl. Mix well and set aside to bloom for 10-15 minutes.

  2. In a stand mixer, attached to a dough hook, Combine the flour, salt and vegetable oil. Pour in the blooms yeast mixture.

  3. Knead this dough at a medium speed for 5-6 minutes until the dough comes together and forms into a ball. It should pull aways from the edges of the bowl and the dough will be smooth.

  4. Lightly grease a bowl and place the dough in it. Cover and keep in a warm place for an hour to rise.

  5. Once the dough has risen and is doubled in size, Roll out the dough and use a circle cutter to cut into 16 3 inch circles.

  6. Prick the bases with a fork and set them aside.

  7. Grease a large frying pan/skillet with 1 teaspoon oil. Place the pizza bases on the pan, spacing them slightly apart from one another.

  8. Cook these on a low heat for a couple minutes until golden on both sides.

  9. Top with pizza sauce, cheese and your favourite toppings.

  10. Place the mini pizzas back on the stove, cover with a lid and cook on a low heat for an additional couple minutes until the cheese melts and bubbles.
