Nando's Chicken Burgers

I love eating fast food as much as the next person but I don’t want to create bad eating habits in my kids. And I know that I can make these same fast food recipes healthier at home. That way, the kids don’t miss out on their favourite treats, but without all the fats and excessive calories. I prefer to bake when I can and cook foods in less oils and fats.

Serves 4
Ingredients
Burgers
300 grams chicken breasts- butterflied
4 tablespoons peri peri marinade
1 teaspoon garlic powder
1 teaspoon paprika
Salt- to taste
Extra Ingredients
2 tablespoons garlic paste
2 tablespoons butter
1/2 teaspoon dried parsley

100 grams halloumi cheese- sliced
Sliced tomatoes
Shredded lettuce
Mayonnaise
Peri peri sauce
Instructions
Marinate the chicken in the peri peri marinade, garlic powder, salt and paprika. Mix well and cook the chicken on both sides for 4 minutes. Remove the chicken from the pan, wrap in foil and set them aside to keep them warm. Fry the halloumi on both sides until golden. Remove them from the pan and set them aside.
Slice the ciabatta rolls horizontally. Mix the butter, garlic paste, parsley, salt and pepper together to make the garlic butter. Spread the garlic butter on the rolls.
Toast the ciabatta rolls butter side down until golden. Set them aside on a chopping board.
Assemble the burgers. First spread over the mayonnaise and peri peri marinade. Top with lettuce, chicken, tomatoes and halloumi cheese. Finally top with the top bun and serve with potato wedges and colelslaw.
