Loaf cakes are the best. They are so quick to bake and cut into perfect uniform slices for a tea party or for a snack on the go. This loaf cake is so delicious and simple that you will want to make it every day. I love how this cake can be made in one bowl and can even be mixed with a spoon if you have the muscles for it.
The important steps for this recipe are that all ingredients should be at room temperature. Cold ingredients will cause the batter to curdle. And you don't want curdled batter. It won't affect the flavour but it may seem like you missed a step or messed up. I assure you, the only thing that you needed to do was to bring all the cold ingredients to room temperature.

Yields 1 loaf
Ingredients
1/2 cup butter- softened
1/4 cup vegetable oil
1/2 cup sugar
1 cup light brown sugar- packed
1 egg
1 cup buttermilk
1 teaspoon vanilla
1 1/2 cups flour
3/4 cup cocoa powder
1/2 teaspoon baking powder
1/4 teaspoon baking soda
1/4 teaspoon salt
Instructions
Preheat the oven to 180c. Line a 5x8 inch loaf tin with parchment paper.
Cream the butter and sugars together for 3-4 minutes until light and fluffy. Scrape down the sides of the bowl.
Add the egg and vanilla. Beat until well combined.
Add the dry ingredients to the batter. mix until just combined.
Slowly pour in the buttermilk and mix until the batter is smooth. Be careful not to over beat!
Pour into the loaf pan.
Bake in the middle of the oven at 180c for 60- 70 minutes. An inserted skewer will come out clean.
Cool in the loaf pan. Remove from the pan and dust with icing sugar.
Serve with whipped cream and fresh berries.
You can add 1 cup chocolate chunks to this recipe, mix it up, by adding some white chocolate to this recipe. That would be absolutely divine!
