We host a lot of dinner parties and when the summer begins, we start planning some great bbqs, so that the family can get together and enjoy the great weather. I feel like we should all have an arsenal of recipes that we can rely on just when we need them. This Mexican street corn pasta salad was perfect to go with grilled chicken and burgers.

Serves 6-8
Ingredients
300 grams pasta- boiled to al dente and cooled
2 cups corn kernels - boiled and cooled/ tinned
1/2 cup mayonnaise
1/2 cup sour cream
1/2 cup feta cheese- cubed or crumbled
1 pickled jalapeño- chopped
1/4 cup coriander- chopped
2 tablespoons lemon/ lime juice
1 teaspoon chilli powder
1/2 teaspoon paprika powder
1/2 teaspoon garlic powder
Salt and pepper
1/4 cup red onion- sliced
1/2 cup tomatoes- chopped
Instructions
Combine the mayonnaise, sour cream, lemon/ lime juice, chilli powder, paprika, garlic powder, salt and pepper. Mix well and set aside.
Mix the pasta, corn, jalapeño, coriander, red onion and the tomatoes in a large bowl. Fold the dressing into the pasta salad. Finally toss the feta cheese in the salad.
Chill the salad for 1 hour before serving.
