Loaded Brookie Bars

These Loaded Brookie Bars are the perfect mix between brownie and chocolate chop cookies. Now you don’t have to decide which to make, when you can have both!!! Everyone who loves their desserts, will love these Loaded Brookie Bars! The best part is that gooey layer in the middle, where the Nutella and molten brownie combine!!! It’s absolute perfection. 



Loaded Brookie Bars


Preparation Time 20 minutes 

Cook Time 35 minutes 

Yields 12 bars 


Ingredients 


Cookie Layer 


1/4 cup butter- melted 

1/6 cup sugar 

1/4 cup brown sugar 

1/2 egg- beaten- reserve rest for the brownie layer 

1/2 teaspoon vanilla 

1/ teaspoon baking soda 

1/4 teaspoon salt 

3/4 cup flour 

3/4 cup chocolate chips 



Brownie Layer 


55 grams chocolate 

1/3 cup butter

3/4 cup sugar 

1 1/2 eggs- beaten 

1/2 teaspoon vanilla 

1/4 teaspoon salt 

1 tablespoon unsweetened cocoa powder 

1/2 cup flour 


1/2 cup Nutella 

16 Oreos 


Additional chocolate chips and 2 Oreos for the top of the brownies 







Instructions 


  1. Preheat the oven to 180c. Line an 8 inch square pan with foil. Grease with butter and set it aside. 

  2. Make the cookie layer: cream the butter and sugars together for 3-4 minutes until light and fluffy. Add the egg and vanilla. Mix it through. Add the dry ingredients and stir to combine. Fold in the chocolate chips. Press the cookie dough into the 8 inch pan. Set it aside. 

  3. Spread the Nutella over the cookie dough. Top it with the Oreos. Set it aside. 

  4. Make the brownie batter: Melt the butter and chocolate together in the microwave at 30 second bursts until smooth. Add the sugar and mix it in. Stir in the beaten eggs and vanilla. Fold in the dry ingredients. 

  5. Pour the brownie batter over the Oreos. Top with extra broken Oreos and chocolate chips. 

  6. Bake at 180c for 30-32 minutes. The top will no longer jiggle. 

  7. Cool the Loaded Brookie Bars before slicing and serving.
