Korean Cucumber Salad

This Korean Cucumber Salad is so delicious, you will not want to eat cucumbers any other way again.

As I write this post, I am chomping down on my Korean Cucumber Salad. My husband was sceptical, thinking the spice would be too overpowering. However, once he tried it, he couldn’t believe that the flavours were so strong but the salad was still fresh and light! You have to give it a try.



Korean Cucumber Salad



Preparation Time 5 minutes

Cook Time 10 minutes

Serves 4 / Yields 2 cups


Ingredients


1 large cucumber- thinly sliced

1/2 teaspoon salt

1 tablespoon vinegar

1 tablespoon honey

1 tablespoon sesame oil

2 teaspoon Gochugaru / red chilli flakes

1 green onion- sliced thinly

Toasted sesame seeds- for garnishing

Instructions

  1. Combine the cucumbers and the salt in a bowl. Mix well then set aside in a colander for 15 minutes. This will help remove any excess water in the cucumber.

  2. In a clean bowl: combine the vinegar, honey, sesame oil and the red chilli flakes. Mix it well. Set it aside.

  3. Shake the colander to remove any excess water from the cucumber then add them to the spice mix , along with the sliced spring onion. Mix it well and adjust the seasoning.

  4. Add the toasted sesame seeds and mix once more. Serve immediately.

  5. Best Eaten right away!
