My kids love classic flavours and vanilla hits the spot. However, recently they fell in love with the flavour of BUTTER! Yes, you heard that right! Butter. This cake was the perfect combination of buttery, sweet and moist. Everything you look for in a cake. So why don't you get to making this, and serve it with a large cup of tea. Coz you are going to need it after this cake.
Ingredients
1 cup butter- room temperature
2 cups sugar
4 eggs - room temperature
2 teaspoons vanilla
3 cups flour
1 teaspoon salt
1 teaspoon baking powder
1/2 teaspoon baking soda
1 cup buttermilk
Butter Glaze
1/3 cup butter
3/4 cup sugar
2 tablespoons water
1 teaspoon vanilla
Instructions
Preheat the oven to 170c. Grease and line a bundt pan with butter and flour.
Combine the flour, baking powder, baking soda and salt in a bowl. Mix well and set aside.
Cream the butter and sugar for 3-4 minutes, until light and fluffy.
Add the eggs one at a time, beating well between additions. Mix in the vanilla.
Add the flour mixture in additions, alternating with the buttermilk, ending with the flour. Scrape down the bowl and mix again.
Pour the batter into the greased bundt pan. Level with a spatula.
Bake for 60-75 minutes, until an inserted skewer comes out clean.
Once baked, remove from the oven and leave to cool for 10 minutes before inverting onto a plate.
Poke holes into the cake while it is still warm.
Make the butter glaze: combine the butter, sugar and water in a saucepan. Bring to a simmer and stir until the sugar is dissolved. Do not boil it. Remove from the heat, pour in the vanilla and mix well.
Brush the cake with the butter glaze while the cake is still warm. It is possible you may not need to use all of the butter glaze.
Cool the cake completely before slicing and serving.
