The summer brings about holidays, kids growth spurts and lots of hunger. I want to make sure they have good food, which is full of nutrients but still fun to eat. I love this jalapeño corn dip because the kids can enjoy it with tortilla chips and even with sticks of celery. They really loved it.
The best part about this recipe is that it takes 5 minutes to make, not too long. You can make a few snacks at the same time and fill the kids up in no time.

Serves 4
Ingredients
2 cups sweetcorn- canned and drained
4 tablespoons butter
1/4 cup mayonnaise
1/2 teaspoon salt
1/2 teaspoon paprika
1/4 teaspoon black pepper
220 grams cream cheese
2 tablespoons green onions
1 sliced jalapeno
1/2 cup heavy cream
1 cup shredded cheese- divided
Instructions
Melt butter in pan. Add the corn and mix well. Add the mayonnaise, salt and paprika.
After a minute, add the cream cheese and let it melt into the corn. Cook it for 2 minutes. Add black pepper and jalapeños. Add half the cheese and mix well. Cook for a minute until the cheese melts into the dip.
Pour the dip into a ceramic serving bowl. Top with the remaining cheese and grill for 2 minutes until melted and bubbly.
Garnish with green onions, hot sauce, jalapeños and even paprika.
Serve immediately with tortilla chips.
