Hot chocolate cookies are layered in so many flavours. They are so rich and chocolate-y. The top is soft, sweet and sticky and then that thick chocolate drizzle. Reminds me of winter and makes me feel all warm inside. This recipe is definitely worth the time. I sent these to the kid’s school, and I was showered with hugs by the kids after school. It was totally worth it.

Ingredients
1/2 cup butter- softened
2/3 cup brown sugar
1/3 cup sugar
1 egg- room temperature
1 teaspoon vanilla
1/3 cup unsweetened cocoa powder
1 cup and 2 tablespoons flour
1/2 teaspoon baking soda
1 teaspoon corn starch
1 cup chocolate chips- divided
10 large marshmallows- cut horizontally
Instructions
Preheat the oven to 180c. Line 2 baking trays with parchment paper. Set them aside.
Beat the butter and sugars together for 3-4 minutes until light and fluffy. Add the egg and vanilla and mix it through once more.
Mix the flour, baking soda, salt and cornstarch in another bowl, then add them to the wet ingredients. Fold the dry ingredients into the wet ingredients until just combined.
Fold in half a cup of chocolate chips.
Scoop 1 tablespoon mixture onto the trays. Bake at 180c for 7-8 minutes. They will still look soft. Don’t worry. This is exactly how it is supposed to be. Remove the cookies from the oven.
Top the cookies with the marshmallow then grill for 2-3 minutes until golden.
Remove them from the oven and set them aside for 2 minutes.
Melt the remaining half a cup of chocolate chips. Drizzle the chocolate over the cookies.
Allow the cookies to set before serving.
