I love chicken tenders and so do the kids. I'll try new flavour combos until the kids want something new. Today I remembered that Chilli’s do a really delicious Honey Chipotle Chicken Crispers and I’m finally sharing the recipe my kids are addicted to.
Try it out. You will love, love, love them!

Serves 4 as an entree or 2 as a main
Ingredients
4 chicken breasts- pounded to 1/2 inch and then cut into strips
Honey Chipotle Sauce
1/2 cup honey
1/4 cup water
1/4 cup ketchup
1 tablespoon vinegar
3 tablespoon hot sauce
1/2 teaspoon garlic powder
2 tablespoons cornstarch
1/2 teaspoon smoked paprika
Breading
1 1/2 cups all purpose flour
1 1/2 teaspoon salt
3/4 teaspoon paprika
1/2 teaspoon black pepper
1/2 teaspoon garlic powder
Batter
1 egg
1/2 cup milk
1/2 cup chicken stock
1 teaspoon salt
1/4 teaspoon black pepper
1/4 teaspoon paprika
1/4 teaspoon garlic powder
3/4 cup flour
Instructions
Make the honey chipotle sauce, by combining all the ingredients in a saucepan. Bring to a boil, reduce the heat and simmer for 2 minutes. Remove from the eat and set it aside.
Heat oil for deep frying to 180c
Combine all the batter ingredients, excluding the flour. Whisk for 30 seconds then add the flour and mix it through. Set it aside.
Combine all the breading ingredients in a shallow dish. Mix well and set aside.
Set up dredging station. Dip the chicken in the batter, allow the excess to drip off, then put the tenders in the seasoned flour. Shake off the excess flour and place the chicken in a plate. Allow it to rest for 15 minutes.
Cook the chicken in the oil for 3-4 minutes each side until crispy and golden brown. Remove from the oil and blot on kitchen paper.
Place the chicken in a bowl and toss it in the sauce. Serve with ranch dressing.
