I don’t have an abundance of money to buy pancake mix like every couple of weeks. So I wanted to come up with a way to make it at home and store it for pancake days. This homemade pancake mix is so easy to make. You won’t believe how many ingredients go into making your own. Nothing special, nothing outrageous. And there are no chemicals or preservatives in my homemade pancake mix recipe. Hope you give this recipe a try yourself. The best thing about this recipe is that if you have a huge family, you can double or triple the recipe according to your needs.

Yields 20 pancakes
Ingredients
Dry Mixture
4 cups/ 500 grams all purpose flour
3 tablespoons baking powder
2 teaspoons baking soda
1 teaspoon salt
3 tablespoons sugar
To Make The Pancakes
1 cup dry pancake mix
1 egg
Up to 1 cup of milk
1 tablespoon melted butter/ oil
Optional
1/2 teaspoon Vanilla
Instructions
To make the dry pancake mix: Combine the ingredients to make the dry pancake mix. Mix it in well and store it in an air tight container for up to 3 months. Keep the container in a cool, dry place.
To make pancakes: combine 1 cup of the dry pancake mix, add the egg and melted butter. Slowly add in the milk until a thick batter forms. You may not need all of the milk. Add vanilla, if using. Set the batter aside for 10 minutes.
Make the pancakes as you usually would.
