Sometimes with dinner I want a side that no one will have eaten before. Something that is original and delicious. I bought feta cheese to make some pizzas and fateyer, but I still had some left in the fridge. Every time I opened the fridge, it would call to me..... 'eat me, eeeeat me'. You all know me, I couldn't resist. I needed to think of something that could be made with potatoes. I thought sweet potato fries with feta? Nope. Didn't sound good enough to me. And I was having that kind of day, where sweet potatoes wouldn't cut it for me. I needed POTATOES!
So these Greek Feta Potatoes made it to the dinner table, to serve alongside some roasted vegetables and a delicious steak. This usually serves 6 people but knowing you all... it will barely serve 4 after you have tried it.

Serves 6
Ingredients
8-10 baby potatoes / 6-8 medium potatoes- par boiled
150 grams feta cheese- in cubes/crumbled
1/2 onion- cut into slices
1/2 teaspoon dried oregano
salt and pepper- to taste
2 tablespoons olive oil
Instructions
Preheat the oven to 230°C / 446°F.
Transfer the potatoes to a large baking tray and drizzle with olive oil.
Slice each potato horizontally and then smash gently with a spatula.
Season with oregano, ground pepper, and salt. and toss the feta cheese over the tops of the potatoes.
Sprinkle the onion over the top.
Bake for approximately 10 minutes more. The feta cheese will melt, and the onion will soften slightly.
Serve alongside your steaks, chicken or even kebabs.
