Funfetti Cookies

I, just like all parents want to make sure my kids are getting the best of everything in life! The best schools, the best games, supplies and especially the best food! Which is why I make everything for them fresh at home. I know that isn’t possible for everyone, because they are restricted with time, ability or even resources. This is why I try and share the easiest and best recipes, that don’t use up so much of your time. These funfetti cookies are definitely the best! And I know you will all agree once you try this recipe. 





Preparation Time 1 hour 

Cook Time 10 minutes 

Yields 16 cookies 


Ingredients 


1 1/2 cups flour 

1 tablespoon corn starch 

1/2 teaspoon baking soda 

1/4 teaspoon salt 

1/2 cup butter - softened 

3/4 cup sugar 

1 egg- room temperature 

1 teaspoon vanilla 

1/2 cup sprinkles/ jimmies 







Instructions 


  1. Combine the flour, salt, baking soda and cornstarch in bowl. Mix well and set aside. 

  2. Cream the butter and sugar for 3-4 minutes until light and fluffy. Add the egg and vanilla and mix through once more. 

  3. Fold in the dry ingredients until JUST combined. Do not over mix the dough. 

  4. Fold in the sprinkles. 

  5. Chill the dough for 1 hour. 

  6. Scoop the dough onto prepared baking sheets. Space the cookies 2 inches apart. 

  7. Bake the cookies at 180c for 10-11 minutes. 

  8. Cool the funfetti cookies on the trays for 5 minutes, then move them to cooling racks.
