I love simple and easy recipes. Especially easy tea cakes for the evening. And this cake is no exception. It is a great base for all types of fruit like berries and nuts. I love adding raspberries and almonds to this recipe. Super yummy and so easy to make. So let’s get started.

Serves 6-8
Ingredients
1 cup all purpose flour
1 teaspoon baking powder
1/4 teaspoon salt
1/2 cup butter- softened
2/3 cup sugar
2 eggs
1 teaspoon vanilla
1/4 cup milk
2 apples- peeled, cored and chopped (3-4 cups)
Icing sugar- to dust
Instructions
Preheat the oven to 170c. Line an 8 inch square baking pan with parchment paper. Set it aside.
Combine the flour, baking powder and salt in a bowl. Mix well and set it aside.
In a clean bowl, beat the butter and sugar on a high speed for 3-4 minutes until light and pale.
Add the eggs one at a time, beating well between each addition. Add the vanilla and mix through once more.
Add the dry ingredients and mix until just combined. Finally mix in the milk.
Fold in the apples until just combined. Do not over mix the batter.
Pour the batter into the prepared cake tin and level off with a spatula.
Bake the cake at 170c for 40 minutes. An inserted skewer will come out clean.
Cool to room temperature before dusting with icing sugar and serving with a large cup of tea.
