I spend a couple days a week experimenting and tweaking recipes, then a couple more days filming and editing videos. For the remainder of the week I work on my other channel. Filming and editing the videos for that channel are a lot easier I must say.
Last night as I was done filming this video, I made myself a huge cup of tea, plated myself a bowl of these mini brownies and topped them with some whipped cream, before sitting down to edit my videos. Once I began eating, I let out this huge sigh of relief. A whole day’s work was definitely worth it. Sometimes I have this huge burst of energy and I can make like 3 or 4 recipe videos a day. On other days I barely want to look at my laptop. A dessert really does help on those bad days.
These double chocolate brownie bites will definitely be the right ‘pick me up’ on those bad days.
Preparation Time 10 minutes
Bake Time 15-20 minutes
Yields 9 inch mould of mini brownies
Ingredients
3 eggs
150 grams sugar
150 grams butter
120 grams chocolate- chopped
1 teaspoon vanilla
60 grams flour- sifted
A pinch of salt
40 grams cocoa powder- sifted
50 grams chocolate chips
Topping
200 grams melted chocolate
40 grams crushed almonds- optional
Instructions
Melt the chopped chocolate and butter in the microwave at 30 second bursts until melted and smooth. Set it aside to cool down slightly.
Beat the eggs and sugar on a high speed for 3-4 minutes until pale. Add the chocolate and mix it in.
Fold the flour, cocoa powder and salt into the mixture.
Once the dry ingredients are folded in, fold in the chocolate chips.
Pour the batter into a lined 25 cm/ 9 inch square baking pan.
Bake the brownies at 180c for 15-20 minutes. Do not over bake them.
Cool them in the pan then cut them into 1 inch squares.
Coat the brownies in melted chocolate then allow them to set on parchment paper.
