As you can probably tell by now, I love my potato salad!!!!! And this dijon potato salad was so good. It was great with my weekend bbq items. So I decided to make burgers, ribs, kebabs, hot dogs and even grilled chicken. The sides were this potato salad, a fresh salad, roasted veggies, corn on the cob and buns. By the end of the evening, people were begging for the recipe! So I thought I would share it with you all today.

Serves 12
Ingredients
750 grams potatoes- peeled and cut into cubes
1/2 teaspoon salt
3/4 cup mayonnaise
3 tablespoons dijon mustard
1/2 cup green onions- sliced
1/2 cup green peppers- chopped
1/2 cup sweetcorn- boiled
1/4 cup pickles- chopped
2 hard boiled eggs- chopped
3/4 teaspoon garlic powder
1/4 teaspoon black pepper
1/2 teaspoon paprika
Instructions
Boil the potatoes. Drain them and set them aside to cool.
In a large bowl: combine the potatoes, green onions, green peppers, sweetcorn, pickles and eggs,
Combine the mayonnaise, salt, pepper, mustard, paprika and garlic powder. Mix well.
Fold the dressing into the salad.
Chill the salad for 2-4 hours before serving.
