Potato wedges are the best accompaniment to fried chicken, burgers and even chicken wings. This recipe is easy to follow and can be made in either the oven or in the air fryer.
Preparation time 20 minutes
Cook time 20 minutes
Serves 4
Ingredients
4 large russet potatoes
2 Tablespoons olive oil
1 teaspoon paprika
1 teaspoon garlic powder
1/2 teaspoon oregano
1 1/2 teaspoon salt
1/2 teaspoon black pepper
Instructions
Wash the potatoes and scrub them clean. We want to keep the skin on them, so make sure you clean them well.
Cut the potatoes length ways.
Soak the potatoes in cold water for 20 minutes to remove extra starch.
Drain the potatoes and pat them dry with kitchen towel.
Place the potatoes in a bowl and add the olive oil, paprika, garlic powder, oregano, salt and pepper. Mix well.
Line the air fryer with parchment or foil. Throw the wedges in and cook at 170c for 15 minutes, remove the foil, flip them over and cook them for an additional 10 minutes.
Serve with your favourite dipping sauces.
Notes
I would not deep fry these wedges as the spices may fall off completely, or get burned, leaving a bitter aftertaste.
