Easy meals are perfect for really busy days and this creamy sun dried tomato pesto and chicken pasta is one of the most popular dinners in our home! Something I can make quickly for my kids and make sure their tummies are full after a long day of school, football practice and homework. It makes them all excited and happy after all that.

Serves 4
Ingredients
300 grams chicken- cubed
1/2 teaspoon paprika
1/2 teaspoon garlic powder
1/2 teaspoon salt
1/2 teaspoon fajita spice mix
200 grams pasta- cooked to al dente- reserve 1/2 cup pasta water for later
3 tablespoons sun dried tomato pesto
300 ml fresh double cream
2 tablespoons onion- chopped
1 tablespoons butter
2 tablespoons olive oil
2 cloves garlic- minced
1/2 teaspoon red chilli flakes
3-4 tablespoons cheddar cheese- grated
Instructions
Marinate the chicken in the paprika, garlic powder, salt and fajita spice mix. Set it aside to marinate for 10 minutes.
Place a pan on a medium heat. Add the oil, butter and onions. Soften the onions, then add the chicken.
Cook the chicken until golden. Add the garlic and chilli then sauté for 30 seconds.
Add the pesto, cream and the pasta and pasta water.
Simmer the sauce for 5 minutes. Add the cheese then garnish with parsley.
