I love breakfast. It’s my favourite meal of the day. I need a proper breakfast so that I can keep myself fuelled for the busy day ahead. Usually I will have eggs, but eggs every day can get a little boring. Thats when I switch it up and this creamy mushroom toast is a keeper. My husband loves it so much that he will happily eat it for lunch and dinner too!
Top your mushroom toast with spinach or even poached eggs. You can’t go wrong with this breakfast!

Serves 2
Ingredients
2 tablespoons butter
Olive oil
225 grams white button mushrooms
3 cloves garlic- minced
2 tablespoons onion- chopped
Salt and pepper- to taste
3 tablespoons creme fraiche/ sour cream
To serve
2 thick slices of bread- toast in a pan with butter
2 poached eggs
Sautéed spinach
Instructions
Heat a large pan on a medium flame. Add 1 tablespoon butter and oil. Once the butter melts, add the mushroom and garlic. Cook them down until golden and tender. Remove the mushrooms from the pan and set them aside.
Place the pan back on the stove, add the onions and sauté them for 1-2 minutes until translucent. Reduce the heat to low and add the mushrooms back to the pan.
Adjust the seasoning. Add the creme fraiche or sour cream. Mix it well them the mushrooms are ready.
Place the mushrooms on the toast and top with poached eggs or sautéed spinach.
