Creamy Macaroni Salad

I love trying new salads all the time. But I always go back to the classics when I have bbqs at my place in the summers. I have a select few salads that I will make, that I know everyone will love.

This creamy macaroni salad is so easy to make and doesn’t require any special ingredients. If you don’t have macaroni, you can use any small sized pasta. It’s all good.





Preparation Time 20 minutes

Chill Time 2 hours

Serves 8


Ingredients


200 grams- dried pasta- cooked to al-dente

1/2 cup dill pickles- diced

3/4 cup green pepper- diced

1/2 cup red onion- diced

2 hard boiled eggs- chopped

1 carrot- grated

1/2 cup sweetcorn- boiled



Dressing


3/4 cup mayonnaise

1/4 cup sour cream

2 tablespoons pickle brine

1 teaspoon sugar

2 teaspoon mustard

1/4 teaspoon salt

1/4 teaspoon black pepper

1/8 teaspoon garlic powder

1/8 teaspoon chilli flakes






Instructions

  1. Combine all the dressing ingredients. Mix well and set aside.

  2. Combine all the salad ingredients. Mix carefully with a spoon.

  3. Add the dressing to the salad and fold it in with a spatula until well combined.

  4. Chill for 2-4 hours until ready to serve.
