Soups are a win in my book. The kids love having soup with garlic bread. But I decided to serve this cream of broccoli soup was served with crunchy croutons! And you can make them yourself too.

Serves 6
Ingredients
3 tablespoons butter
1 onion- sliced
3 cups chicken stock
8 cups broccoli
3 tablespoons flour
2 cups heavy cream
Ground pepper- to taste
Salt- to taste
Instructions
Melt the butter in a pot. Sauté the onion for 2-3 minutes until translucent. Add the broccoli and chicken stock.
Cover and cook on a medium heat for 10 minutes. The broccoli should be cooked through.
Pour the contents of the pot into a blender and blend until smooth.
Pour the soup back into the pan.
Add the heavy cream and adjust the seasoning. Cook it for a further 2 minutes.
Pour into bowls, top with croutons and serve.
