I’ve been seeing this new trend for cosmic brownies online, and I’m usually not one to follow a trend but once the kids saw them, they were driving me nuts to make them something like this. Now after a couple of experimental batches, I have come up with an amazing recipe for cosmic brownies. A fudge brownie, topped with chocolate ganache and these cool sprinkles on top of that. Don’t these look so cool?
Preparation Time 15 minutes
Cook Time 15-18 minutes

Ingredients
Brownies
3/4 cup unsalted butter- melted
3/4 cup chocolate
2 eggs- room temperature
2/3 cup light brown sugar
2/3 cup sugar
2 teaspoon vanilla
3/4 cup cocoa powder
3/4 cup flour
Ganache
1 1/2 cup chocolate chips
1/2 cup double cream
1/4 cup sprinkles
Instructions
Preheat the oven to 170c. Line a 9x9 inch square pan with foil. Grease the foil with oil/ melted butter. Set it aside.
Melt the butter in a bowl. Add the chocolate and heat it at 20 second bursts until smooth and melted.
Add the sugars, eggs and vanilla. Mix well until smooth and well combined.
Add the flour and cocoa powder and mix until just combined. Do not over mix the batter.
Pour it into the prepared pan. Bake for 15-18 minutes. Bring it out of the oven and set it aside.
Quickly combine the ingredients for the ganache in a bowl. Heat it in the microwave at 20 second bursts until smooth and well combined.
Pour the ganache over the brownies while they are still warm.
Top them with the sprinkles and then put the brownies in the fridge to allow the ganache to set
Once the ganache is set, cut the brownies into squares.
