Copycat Subway Chocolate Chip Cookies

What do you do when you love Subway's Chocolate Chip cookies, but don't want to leave the house and drive to the nearest Subway??? Well I have finally gotten the recipe down! And this one is perfect! Chewy and bursting with chocolate flavour. You will not want to miss this recipe!




Copycat Subway Chocolate Chip Cookies



Preparation Time 15 minutes 

Cook Time 10 minutes 

Yields 12 


Ingredients 


1/2 cup butter- soft to poke 

1/2 cup light brown sugar 

1/3 cup sugar 

1 egg - room temperature

1 teaspoon vanilla 

1 1/2 cups flour 

1/4 teaspoon salt 

1/2 teaspoon baking soda 

1 cup chocolate chips- additional for topping later 








Instructions


  1. Preheat the oven to 175c. Line 2 baking trays with parchment paper. Set them aside. 

  2. Beat the butter and sugars together on a high speed for 3-4 minutes. Add the egg and vanilla.

  3. Add the flour, baking soda and salt. Mix it in with a spatula until almost combined. A few pockets of dry flour will remain. Fold in the chocolate chips. 

  4. Roll the dough into golf ball sized dough balls. Place them on the line baking sheet 2 inches apart. DO NOT PRESS THEM DOWN. 

  5. Bake the cookies at 175c for 8-10 minutes. They will be soft when they come out the oven but the edges will be golden.  Top with additional chocolate chips. 

  6. Cool the cookies for 5 minutes before moving them to a cooling rack
