Cookie Dough Ice Cream

I love ice cream and so do the kids. But being a full time mum and blogger, I don't always have time or the energy to make ice cream and the kids want something fast. This recipe is so easy. No cooking on the stove or egg yolks. So this recipe is perfect for busy mums. The creaminess of the ice cream went perfectly with the richness of the cookie dough.


This recipe contains no raw flour so no need to worry about that. It's perfectly safe for everyone to eat.







Preparation Time 20 minutes

Freeze Time 4 hours

Makes 600ml


Ingredients


1/2 cup flour

1/4 cup butter

1/4 cup brown sugar

1/8 cup milk

1/2 teaspoon vanilla

1/2 cup mini chocolate chips

300 ml heavy cream- chilled

200 ml sweetened condensed milk- chilled






Instructions


  1. Preheat the oven to 180c

  2. Evenly spread the flour on a sheet pan. Bake the flour for 5 minutes to kill the bacteria. Cool on the tray until room temperature.

  3. Cream the butter and sugar together until light and fluffy. Add the milk and vanilla. Mix well.

  4. Add the baked flour and mix well with a spatula.

  5. Fold in the mini chocolate chips.

  6. Scoop out small spoons of the cookie dough and roll into balls. Freeze the cookie dough balls for 1 hour.

  7. Beat the chilled cream until soft peaks. Add the sweetened condensed milk and beat until thickened. Fold in the cookie dough pieces.

  8. Transfer to a baking pan. Top with additional cookie dough. Freeze 4-5 hours.
