Tiramisu was always a favourite of mine growing up, and it still is! I went to a dinner party this weekend and I promised that I would make dessert. I had this huge craving for tiramisu but wanted to change things up a little. This chocolate tiramisu is perfect because the coffee doesn’t hit as hard and the kids love it!!!!! You can’t go wrong with a lovely tiramisu.
Preparation Time 10 minutes
Chill Time 3-4 hours
Serves 10-12
Ingredients
3 cups whipping cream- cold
1 cup sugar
2 teaspoons vanilla
450 grams mascarpone cheese- cold
3 cups brewed coffee- cold
2 packages lady fingers ,Savoiardi brand can be found in the cookie aisle at your local grocery store, or online
Ganache
2 cups chocolate
1 cup heavy cream
Instructions
Combine the ingredients for the ganache. Heat in the microwave at 30 second bursts until smooth. Set it aside.
Beat the heavy cream on a medium speed. As it beats, slowly add the sugar and vanilla. Beat the cream until stiff peaks form.
Add the mascarpone cheese in 2 additions. Mix one part well before adding the other. But do not over mix the mixture, because it will split!
Dip both sides of the lady fingers (but do not soak) in the coffee, then arrange them in a 9x 13 inch rectangular pyrex dish.
Smooth half the mascarpone mixture over the lady fingers. Top with half of the ganache. Then repeat the layers again, ending with the ganache.
Chill the tiramisu in the fridge for 3-4 hours or better yet, overnight.
