We all have those cravings when you just have to have something sweet in the moment and you don't want to have to wait for things to set, or create lots and lots of elements for just one dish. I call those comfort desserts. When you can rustle up a comfort dessert with just a handful of ingredients and no fuss. This chocolate pudding ticks all the right boxes for me. Sometimes to make it fancy and when I have a little time on my hands, then I would just top this off with some whipped cream and chocolate shavings. But that is not a necessity. As I say to my husband, 'grab a spoon darling.'
Cook Time 5 minutes
Cool Time 10 minutes
Serves 4
Ingredients
1 1/3 cups sugar
2/3 cup cocoa powder
1/3 cup corn starch
a pinch of salt
4 1/2 cups whole milk
3-4 Tablespoons butter
1 teaspoon vanilla
Instructions
In a medium saucepan, combine the sugar, cocoa powder, salt and corn starch. Mix well. Add the milk and whisked until well combined.
Continuously stir on a medium heat until the mixture comes to a boil.
Allow the mixture to boil for 1 minute. Stir constantly. Then remove from the heat and stir in the butter and vanilla.
Allow the mixture to cool. Place a layer of clingfilm on the surface of the chocolate pudding. This prevents a skin from forming on the pudding.
