Chocolate Mousse Brownies

I love brownies! They are my favourite dessert. I’ll make them once a week and people go nuts for them! This time I wanted to mix things up and add another dimension to it. The brownies are so fudgy and gooey, it needed something creamy to just it to the next level. So a light and creamy chocolate mousse was definitely needed.



Chocolate mousse brownies


This recipe is so easy and delicious, you will wish you had tried it before!

Firstly, you need to make the brownie batter, bake the brownies and then set them aside to cool to room temperature. Next make the mousse mixture and spread it over the top of the brownies. Top the mousse with some chocolate shavings or chocolate curls, then chill them for 2 hours.


I highly recommend chilling these for an hour or so before cutting these yummy brownies. The mousse needs to set before slicing. Wipe the knife clean between each cut. And serve immediately.

Ingredients


Brownie Layer


4 eggs- room temperature

2 cups / 400 grams sugar

3/4 cups /170 grams butter- melted

1 teaspoon vanilla

1 1/2 cups / 192 grams flour

1/3 cup / 43 grams cocoa powder

1/2 teaspoon baking powder

1/4 teaspoon salt


Mousse Layer

1 1/2 cup heavy cream - divided

1 cup/ 170 grams chocolate chips/ chopped chocolate

Chocolate curls - to decorate






Instructions

  1. Preheat the oven to 170c. Line a 9x13 inch baking pan with parchment paper.

  2. Brownie layer: in a bowl: combine the eggs, sugar, melted butter and vanilla. Whisk until well combined.

  3. Add the cocoa powder, flour, baking power and salt. Fold it in until just combined. Do not over mix it.

  4. Pour into the prepared baking pan.

  5. Bake for 30 minutes. An inserted skewer will come out with a few crumbs on it.

  6. Set it aside to cool to room temperature.

  7. Mousse Layer: heat 1/2 cup heavy cream for 50 seconds in the microwave. Add the chocolate chips and stir until the chocolate is melted and mixed in. This will take around 2-3 minutes. Set it aside to cool.

  8. Pour the remaining 1 cup heavy cream in a medium bowl. Beat it until soft peaks. Then carefully beat it to stiff peaks.

  9. Fold in the cooled chocolate mixture into the whipped cream until just combined.

  10. Pour the mousse over the cooled brownies. Level it off with an offset spatula. Garnish with chocolate curls.

  11. Chill 2 hours until ready to serve.
