I love desserts that can feed a crowd, not just because I entertain a lot. I love them because they are so easy to put together and are always a success. Desserts that are layered and chilled in a deep dish, are so much easier than those set in glasses. Setting them in individual serving glasses is so much more work, and I feel like there is a lot of wastage that way.
This chocolate lasagna is something I'll rustle up in an hour, the night before a dinner party. I prepare it the night before because I have so much more to do before a party and then this dessert gets time to rest in the fridge overnight so its all set and done before breakfast the next day! Win-win!
I don't do packaged puddings as a lot of people already know. I make it myself. And trust me, its better when you make it yourself. People can tell the difference between packaged and fresh. This chocolate pudding recipe is a keeper and will totally transform this chocolate lasagna from something 'ordinary and just ok' to something 'amazing!'
If you are worried about leftovers, dont be. This recipe is so good, people will beg to have second helpings and even ask to take it home with them. I should know, it happens all the time with me. I know the recipe states it serves 24, but you may realise that some people suddenly get hungrier after the first serving.

Ingredients
36 original oreos- crushed. Including creams.
6 tablespoons butter- melted
8 oz- 225 grams cream cheese- room temperature
1/4 cup sugar
400 grams whipped cream- separated
Chocolate pudding layer
2/3 cup sugar
1/4 cup cocoa powder
3 tablespoons corn starch
1/4 teaspoon salt
2 1/4 cup milk
2 tablespoons butter
1 teaspoon vanilla

Chocolate shavings
Instructions
For the chocolate pudding: combine the sugar, cocoa powder, corn starch and salt in a saucepan. Whisk it well. Slowly add the milk and mix until smooth.
Cook it on a medium heat until it boils. Cook for 1 minute until it begins to thicken. It should coat the back of a spoon. Remove it from the heat and set it aside.
Stir in the butter and vanilla. Pour it into a bowl and cover the surface with clingfilm. Chill for 2 hours.
While the pudding chills, crush the Oreos until fine crumbs. Add the melted butter and mix well. Press the crumbs into a 9x13 inch pan.
Combine the cream cheese and sugar. Beat until smooth.
Fold in 200 grams of whipped cream. Pour it over the cookie base. Level off with an offset spatula. Chill for 10 minutes.
Remove the clingfilm from the top of the pudding. Mix it through until smooth. Pour it over the cream cheese layer. Smooth the top with an offset spatula. Chill 10 minutes.
Top with the remaining whipped cream and then the chocolate shavings.
Chill 2 hours before serving.
